If you’ve missed those golden, fluffy waffles of Saturday mornings past I’ve got a recipe for you. Paleo waffles! These waffles are paleo, low carb, gluten free, and super fluffy. They even have an option for dairy-free.

I love creating live videos because I get to do things like drop eggs on the counter publicly. It’s like a live blooper reel! Really though, it gives me a chance to show you all what living Paleo day to day really looks like. I really do make paleo waffles on Saturday mornings, I am constantly a mess in the kitchen, and I can get it all done in 10 minutes and then get back to my Saturday morning. It’s not always lovely but it tastes good and it’s quick and easy. I’ve been able to get past the biggest barrier to paleo I had: cooking every single thing from scratch. I went from making eggs for 2 out of 3 meals to having a wide variety of dishes I can share.

Ingredients:

1 1/4 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 tablespoon maple syrup
2 eggs
2 tablespoons butter or coconut oil
1/2 cup milk or coconut milk
1 tablespoon almond butter

Mix ingredients and pour into waffle maker. Makes 2 Belgium waffles. If you don’t have a waffle maker you can pour into pancake molds and cook on the stove.
