Most of the time I make this recipe I’m pairing it with eggs or sloppy joe so I slice off a few pieces and then just toast each piece rather than the whole loaf.
1/2 cup almond flour
4 teaspoons tapioca flour or arrowroot powder
1 teaspoon coconut flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon sweetener (or a few drops of liquid stevia)
1 tablespoon coconut milk
1 teaspoon vinegar
Whisk everything together. (I use my immersion blender!) Butter a glass loaf pan and pour in the batter. Microwave 5 minutes or until the bottom isn’t liquid. Remove and allow to cool or slice as is. Toast before serving.
And that really is it! Not the fanciest of dishes but you can’t beat it for ease and speed.
