Paleo Granola…Paleonola, get it? I ordered some name-brand Paleonola for Adam for Christmas a while back and it was tasty but man was it ex-pen-siiiiiive. I thought it would be pretty easy to make so I experimented a bit and created my own made-to-order Paleo granola recipe.
Ingredients:
10-12 ounces of crushed or chopped nuts (I used walnuts, almonds, sunflower seeds, pumpkin seeds, and pecans
2 ounces of unsweetened coconut flakes (about 1/2 a cup)
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
2 tablespoons of butter
1/2 teaspoon stevia extract
2 tablespoons of maple syrup
2 tablespoon of honey
5 ounces dried cranberries
2 ounces of unsweetened coconut flakes (about 1/2 a cup)
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
2 tablespoons of butter
1/2 teaspoon stevia extract
2 tablespoons of maple syrup
2 tablespoon of honey
5 ounces dried cranberries
Instructions:
Preheat oven to 300 degrees. Combine everything except cranberries in a bowl and mix. Lay a piece of parchment paper on a baking sheet and spread the paleonola on the paper. Bake for 15 minutes, stirring once or twice. Remove, stir in cranberries, and let cool.

I don’t have a scale….about how many cups are 12 oz of nuts?
Hey Nicci! I usually end up with about 3 cups of nuts.
This was great! I wish I would have noticed the last line that says “stir in the cranberries” since the first line said “Combine everything in the bowl” but it was still good! Just sticky since the fruit warmed in the oven. I used sunny seeds, slivered almonds, shelled pistachios, cashews, dried cranberries & blueberries. Definitely a make again snack!
