Some healthy paleo muffins to have with bacon and an egg over easy or with a preserve for a treat!
Both of these healthy paleo muffins can be mixed up and put in the oven or in the microwave for a quick breakfast addition. I keep a stock of silicon muffin cups for these, crustless quiches, and candies and they work well in the oven and in the microwave.
Dense Healthy Paleo Muffins
These muffins are dense and great for jams and preserves.
4 tablespoons of almond flour
3 tablespoons of butter
4 tablespoons of almond butter
7 drops liquid stevia extract
2 tablespoons coconut milk
1 teaspoon tapioca or arrowroot flour
1/8 teaspoon baking soda
1/8 teaspoon salt
Preheat oven to 400 degrees. Combine ingredients and cook until a knife comes out clean, about 10 minutes. Or microwave 1 1/2 to 2 minutes. Makes about 5 muffins.
